      Cozy Up to Autumn with Delicious Pumpkin Spice Muffins

      Ingredients:

      For the Muffins:

      1 ¾ cups all-purpose flour

      1 ½ teaspoons baking powder

      1 cup canned pumpkin puree

      ½ cup granulated sugar

      ½ cup brown sugar (packed)

      2 large eggs

      ½ cup vegetable oil

      1 teaspoon vanilla extract

      For the Streusel Topping:

      ¼ cup all-purpose flour

      ¼ cup granulated sugar

      ¼ cup rolled oats

      ¼ cup unsalted butter (cold and cubed)

      ½ teaspoon ground cinnamon

       

      Instructions:

       

      1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
      2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
      3. In a separate bowl, combine the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until well combined.
      4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
      5. In a small bowl, prepare the streusel topping. Combine the flour, granulated sugar, rolled oats, cubed butter, and ground cinnamon. Use a fork or your fingers to crumble the mixture until it resembles coarse crumbs.
      6. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
      7. Sprinkle the streusel topping evenly over each muffin.
      8. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
      9. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
